Apple Cider Donuts
Directions
REcipe makes 12 donuts and 12 donut holes
Add apple cider to a small saucepan. Heat on medium high heat and reduce to 1 cup, this takes about 15 minutes. Allow to cool
Melt butter in microwave safe dish in 15 second increments. Remove from microwave and allow to cool.
To a large bowl add flour, brown sugar, baking soda, baking powder, salt, nutmeg, cinnamon. Whisk until just combined. Be sure to break up brown sugar clumps.
In a small bowl add reduced apple cider, melted butter and eggs, whisk this mixture together until it is well incorporated.
Make a well or opening in the middle of the bowl of the flour mixture. Pour the wet ingredients into the center.
Gradually mix the flour mix into the wet ingredients until a stick dough forms. Do not overmix. Once a dough is created form a ball cover with plastic wrap and allow to rest in the refrigerator for at least 1 hour. This will keep in the refrigerator for up to 3 days.
On a clean, floured surface roll out dough with a rolling pin to about 1/2 inch thick.
Use donut cutter or any round cutting device to create 3 inch donuts and donut holes. Reform dough and roll out to 1/2 each and repeat until all donuts are cut.
Fill a Dutch oven with a minimum of 3 inches of oil. Heat oil to 325 degrees Fahrenheit. (use a candy thermometer to ensure accuracy.
While the oil is heating prepare a plate lined with paper towels to absorb excess oil from cooked donuts.
In a separate plate combine Cinnamon Sugar topping ingredients.
Gently place 3 cut donuts in 325 degree oil and allow to fry until golden brown, about 2-3 minutes on each side, 1 minute each side for donut holes. Be careful not to overcrowd while cooking.
Briefly place fried donut on paper towel lined plate. Then toss in Cinnamon Sugar mixture to coat.
Serve warm and enjoy!

2/3 cups packed brown sugar
2 tsp baking powder

6 TB butter, melted and cooled
Oil for deep-fat frying
Cinnamon Sugar Topping
3/4 cup sugar
5 tsp cinnamon
