Honey Crisp Apple Pop-Tarts
Directions
REcipe makes 14 Square Pop-tarts
Melt the butter over high heat in a medium sauce pan. Add the apples and stir until they just start to soften, about 2-3 minutes. Add the brown sugar, stir in cinnamon continue to stir and cook until the sugar has melted and mixed with the apples about 2-3 minutes. Remove from the heat and transfer the apple mixture to a bowl. Cool for 30 minutes.
2. Preheat oven to 400°F. Line two large cookie sheets with parchment paper, set aside. In a small bowl, whisk together egg and water, set aside.
3. Roll out pie crust onto lighted floured surface about 1/8-inch thick. Use a pizza cutter or knife to cut into 2.5 inch squares. Reroll dough and cut as many squares as you can, I ended up with 28 pie dough squares. Note: you can cut whatever shape or size you want, I’ve made full size traditional pop tart rectangles and fun heart shaped tarts in the past- get creative!
4. Place 7 dough squares on each cookie sheet. Spoon 1 tablespoon of filling onto each dough square, leaving 1/2-inch border around edges.
5. Use a small brush or your finger to outline the very edges of dough with egg and water mixture, this will help adhere the top layer of dough. Add a top layers of pie dough and lightly press edges with a fork to seal them.
6. Bake for 10-12 minutes, until golden brown. Remove from oven and transfer to a wire rack to cool.7. In a small bowl, whisk together powdered sugar, milk, cinnamon, and vanilla extract. Spoon glaze on top of cooled poptarts. Let the glaze to set before serving.

Pie Dough:

or make homemade with your favorite recipe
Apple Filling:
2 apples (I used Honeycrisp) peeled, cored and small diced
3 TB butter
1/2 cup brown sugar
1/2 tsp ground cinnamon
To assemble tarts:
1 large egg
1 tsp water
Cinnamon Glaze:
1 3/4 cup Powdered sugar
2 to 3 TB milk
1 tsp cinnamon
2 tsp vanilla extract
