Directions
1. Add chicken breast to Buttermilk Brine, let brine for at least 1 hour
2. Preheat at least 2 inches of canola oil in large saucepan or skillet, until you’ve reached 350 degrees Fahrenheit.
3. Toss each piece of chicken in breading, full coat- should have a bumpy texture.
4. Gently place in hot oil, should hear that strong sizzle sound!
5. Cook both sides until golden brown. Make sure the internal temperature is at least 165 degrees Fahrenheit.
6. Remove from oil and place chicken on paper towel lined plate.
7. Grab buns, pickles, mayo/ sauce and assemble.
8. Enjoy!

Chicken
2 Chicken Breast (pound each breast to 1/2 thickness for even cooking) .
Buttermilk Brine
1 cup Buttermilk
1 tsp paprika
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
Mix all ingredients together .
Breading
3/4 cup All Purpose Flour
3/4 cup corn starch
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cayenne
1/2 sea salt
Mix all ingredients together and set aside .
Brioche Bun
Lightly Toast in Pan with butter
Quick Pickles
English Cucumber sliced 1/4 inch thick
1 cup white vinegar
2 cloves of garlic minced
1 tsp mustard seeds
1 tsp dill seeds
1 tsp sea salt
Sprinkle red pepper flakes & black pepper to taste
Combine all ingredients refrigerate for 30 minutes/ until ready to serve.
Spicy Mayo
1/4 cup mayo
1 tsp hot sauce
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp cayenne
Mix all ingredients refrigerate until ready to serve .
Polynesian sauce
1/4 cup French dressing
2 tablespoons honey
1/2 tablespoon apple cider vinegar
Mix all ingredients refrigerate until ready to serve
