Gingerbread Cupcakes

REcipe makes 12 Cupcakes


DIRECTIONS
1. Preheat the oven to 350 degrees. Line a 12-cup muffin pan with paper liners.


2. In a medium bowl combine the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt.


3. Using an electric mixer, beat together the butter and brown sugar until pale, light and fluffy. Beat in the vanilla, molasses and eggs one at a time until combined. Add the flour mixture alternating with the milk until everything is combined.


4. Divide mixture among 12 paper lined muffin cups filling each 2/3 full. Transfer to the oven and bake until a toothpick inserted into the center of each comes out with moist crumbs attached, 18-22 minutes.


5. Let cool, frost with cream cheese frosting, top with sprinkles or mini fondant gingerbread men!

Gingerbread Cupcakes

INGREDIENTS
1 2/3 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
2 tsp vanilla
1/2 cup light brown sugar
1/4 cup unsalted butter, softened
1/4 cup vegetable oil
2 large eggs
1/2 cup unsulphured molasses
1/2 cup milk
