Instant Pot- Parmesan Risotto

Ingredients

2 TB of Butter

1 medium shallot chopped

4 cloves of garlic minced

2 cups Arborio Rice

1 cup of dry white wine

3 cups of Chicken broth

1 cup of Parmesan Cheese, grated

2 TB of chopped Parsley

Salt & Pepper

 
 

Directions


1. Set Instant Pot to saute function. Melt butter and add shallot and cook until tender. Add garlic and cook for an additional minute. Stir in rice and toast for 2 minutes.

2. Deglaze pot with wine and cook until most of the wine is absorbed.

3. Turn sauté function off, add broth and place lid on Instant Pot. Set to pressure cook for 12 minutes.

4. Turn valve to release pressure, remove lid and stir in parmesan, salt and pepper.

5. Top with herbs and enjoy!
