REcipe makes 4 servings

Directions
1. Preheat oven to 425.

2. Place cubed sweet potatoes and broccoli florets on sheet pan. Drizzle each with 1 tsp of sesame oil and sprinkle with salt and pepper. Place in oven for 15 minutes.

3. Combine marinade ingredients. Pour over salmon fillets and allow salmon to marinade for 15 minutes while the sweet potatoes and broccoli are cooking.

4. Remove sheet pan from the oven. Using a spatula gently push cooked vegetables to the side and add salmon fillets and chopped red pepper to the sheet pan.

5. Drizzle bell pepper with 1 tsp of sesame oil and sprinkle with salt and pepper.

6. Place sheet pan back in the oven and allow to cook for 10-15 minutes until salmon reached desired doneness. Internal temperature should be at least 145 degrees Fahrenheit.

7. During this time you can cook the marinade in a small saucepan to create a Soy Ginger sauce for the fish. Allow this to simmer for 10 minutes.

8. Once the salmon is cooked to desired doneness. Remove from oven, brush or ladle Soy Ginger Sauce over salmon and/or vegetables, garnish with chopped scallions and sesame seeds and serve!

4 salmon fillets (3-4oz each) cleaned and descaled. Skin on or off- whatever your preference is!

2.5 cups of Broccoli Florets

2.5 cups sweet potatoes peeled and cubed

2 cups chopped red bell pepper

1 TB sesame oil

salt and pepper

Marinade/ Sauce
3 TB sesame oil
4 TB soy sauce
4 cloves of garlic, minced
1 TB rice vinegar
1 TB brown sugar
1 tsp ginger, grated
salt
pepper

Garnish (optional)
sesame seeds
scallions
